Summer’s almost here (or already here, depending on where you live) and the produce in the groceries is starting to show the season. Including the arrival of zucchini.
Man, I love zucchini.
A great, easy side dish that looks way more impressive than it should is shaved zucchini. You’ll need:
- 2 zucchini (or 1 large one)
- 1 tbps Olive oil
- Zinter Brown Mediterrano Gourmet Salt and Pepper
Wash zucchini. Using your potato peeler, peel long strips of zucchini off your… zucchini. I peeled it into a cube to get long, thick strands. You can use the seedy centres but I found that they went mushy in the frying pan, so you might want to save them for later and just use the firmer, outer sections. Heat about 1 tbsp of olive oil on medium heat in a frying pan. Toss in your zucchini strands once the oil is hot and sauté them for about 8 minutes, or until they’ve gotten soft and bright green but not mushy. Season with ZB Mediterrano Gourmet Salt and Pepper, and be generous! I used about a ½ tbsp on my single small zucchini and it was just about right.
The zucchini strands come out with a texture a little like pasta, and would make a great bed for something light and not too saucy – lemon shrimp skewers, maybe?
